Cheesy Curry Chicken Breasts

Grilled crock pot curry cheesy boneless/skinless chicken breasts.

Sounds crazy.

Yes, yes. But good.


Grilling chicken breast with temperatures outside in the 40’s … 5 days to Christmas. One has to be able to enjoy the cold in life to make special wonderful food! I sure do. Summer in my heart loves Winter too!

You don’t have to grill outside, you could use a panini press or a grill pan on the stove, whatever you want to do to sear the chicken breast first.

Thinly sliced sweet onions go on the bottom of the crock pot. Mayonnaise, some softened Cream Cheese, Romano Cheese and my Old-Time Summer Curry Spice Mix combined then slathered all over the chicken.

More cream cheese goes on top. Green onions later on.

Cook for up to 6 hours. Try to not want to get a spoon and dig in. Dare!

Seared Cheesy Curry Chicken Breasts in the Crock Pot

Grill to sear chicken, combine mayo and spices and cream cheese in crock pot with the chicken.

Ingredients
  

Chicken Breasts

  • 6-8 pieces Chicken Breasts

Curry Spice Mix on the Chicken

  • 1 tbsp Curry Spice Mix

Sauce to go on the chicken

  • 1 1/2 Cup Mayonnaise
  • 5 ounces Cream Cheese softened
  • 2 tbsp Curry Spice Mix See **Notes
  • 1/4 cup Romano or parmesan finely grated

Cream Cheese on top

  • 8 ounces Cream Cheese cubed

Granulated Garlic & Black Pepper

  • 1 tsp Granulated Garlic
  • Fresh Black Pepper to taste

Onions

    1st

    • 1 Sweet Onion Thinly Sliced in the bottom of the crock pot.

    Last

    • 2 Green Onions Thinly sliced, for near end of cooking and serving.

    Instructions
     

    • Grill chicken to sear/brown the outside.
      6-8 pieces Chicken Breasts
    • Sprinkled the first Curry Spice Mix all over the grilled chicken.
      1 tbsp Curry Spice Mix
    • Mix the sauce ingredients in a small bowl.
      1 1/2 Cup Mayonnaise, 5 ounces Cream Cheese, 2 tbsp Curry Spice Mix
    • Slather sauce all over the chicken.
    • Put Sweet Onions into crock pot, then chicken on top. Add cubes of cream cheese. Cover and Cook 5 to 6 hours

    • Add Granulated Garlic and Pepper to taste
    • The last hour add some green onion, reserving some of the white for serving.

    Notes

     Old-Time Summer Curry Spice Mix – Recipe
    Combine all ingredients into your jar. Secure the top, and shake to mix up. Label as: Old-Time Summer Curry Spice Mix
    7 tsp Ground Fenugreek (2 tbsp + 1 tsp), 2 tbsp Ground Turmeric, 1 tbsp Ground Ginger, 1 tsp Granulated Garlic or Garlic Powder, 1/2 tsp Ground Mace, 1/2 tsp Ground Cloves, 1/2 tsp Ground Onion ,Fresh Black Pepper to taste, omit for AIP
